Reason for strange behavior and death in my red tail boa?

To make it short and sweet, we adopted a red tail boa from a guy off craigslist about a month ago and he was the sweetest most docile snake I have ever handled. The guy said he eats every two weeks but hadn’t wanted his last large rat, so we tried again a week later. He killed the small rat we gave him but kept biting himself and struggling to eat, eventually refusing to eat it after a few attempts. The next week we tried again, he didn’t even kill it. For the past two weeks he had also been lethargic and bending his head backwards. We also noticed he hadn’t used his tongue in a while. He died today. I need to know why! Ideas? I’m so upset...
